Simple to make, deliciously light and fragrant, this sorbet is the ideal dinner party palate cleanser, or summer or autumn dessert. It’s also a great accompaniment to a light cake, alone with berries, or as a sumptuous foil for dark chocolate on a winter night.

Serve it with a small shot of pure Argento Limone Limoncello to enhance the indulgence!

Ingredients

The secret of a good sorbet is to ensure the ingredients are well mixed and of good quality. This requires a bit of effort, taking the mixture out of the freezer to agitate occasionally will help it achieve that signature fluffiness. You will need to watch that you don't burn the sugar syrup, and that only the best limoncello is used. Argento Limone Limoncello uses the highest quality neutral spirit to achieve our pure flavour and smoothness.

  • 1 1/2 cups sugar

  • 2 cups of water

  • Finely grated zest of 2 lemons

  • 1/2 cup fresh lemon juice

  • Pinch of salt

  • 1/2 cup limoncello

Method

In a saucepan, combine the sugar and water. Bring to a low boil over medium-high heat, stirring until the sugar is completely dissolved and a syrup has formed, but do not let it burn.

Place the pot with the syrup aside to cool to room temperature. Once cool, pour the syrup into a bowl and stir in the lemon zest, juice, salt and limoncello.

Refrigerate until very cold (this can take a couple of hours, so plan ahead).

Pour the cold lemon mixture into an ice cream or sorbet maker and churn according to the manufacturer’s instructions. If you do not have a machine you can churn by hand, by placing the mixture in a cold metal bowl and sitting it in ice, or stirring and placing in the freezer for firming up several times until the desired consistency is achieved.

Spoon the sorbet into a freezer-safe container and freeze. Check the mixture occasionally and continue to score it with a fork to loosen the mixture.

Serving

Fill small chilled glasses or bowls with about 1/2 cup or an ice-cream scoop of the sorbet (filled bowls will keep in the freezer for up to 1 day so this can be made ahead of a dinner party).

Garnish with mint, or fresh berries

Serve with a small shot glass of Limoncello on the side for extra indulgence. Fabulous on a warm summer or autumn night. Enjoy!
